Choose a flat (rectangular), dense piece of meat (like for brawn). Make cross cuts on the meat, not cutting all the way through.

Mix the marinade components and coat the meat on all sides and in the cuts, season with salt and pepper to taste. Let the meat marinate for 10-12 hours.
- Lemon juice: 1 tablespoon
- Soy sauce: 3 tablespoons
- Mustard: 1 tablespoon
- Olive oil: 2 tablespoons

Slice the cheese and tomatoes, and chop the garlic. Insert cheese, tomato, and garlic into each cut. Optionally, add slices of mushrooms.
- Hard cheese: 200 g
- Tomatoes: 2 pieces

Wrap the meat in foil, place it on a baking tray, and put it in a preheated oven at 180–200 degrees to bake for 50–60 minutes.
