Wash the duck, dry it. Remove any unplucked feathers if present. Trim excess fat from the belly. Cut into portion pieces and place in a roasting pan or other baking dish.

Preheat the oven to 180 degrees.

Add coarsely chopped apples to the duck. Add salt, honey, mustard, cranberry, and mix well by hand. Let it sit for 30-50 minutes.
- Green apples: 4 pieces

- Mustard: 2 tablespoons
- Frozen Cranberries: 0.5 glass

Place the duck in a dish so that the apples are under the pieces of duck, cover it and put it in the oven for 2 hours. After one hour, reduce the temperature to 150 degrees.

Wash the potatoes well and cut them into rings or half-rings 1–1.5 cm thick without peeling.

Take the duck out of the oven, add chopped potatoes around the duck, cover with the resulting sauce, and put it back in the oven for another 30 minutes.

10-15 minutes before the baking time ends, open the lid and roast the duck until golden brown, basting 2-3 times with the duck sauce.
