First, we cut the meat into small pieces.

Pour vegetable oil into a wok, heat it on low heat, add 1 tablespoon of sugar and dissolve while constantly stirring. Slightly increase the heat and bring the mixture to a light brown caramel color.

We drop pieces of pork into the wok, stir quickly, and to avoid scratching the surface, it's best to use a silicone spatula. Now each piece is coated with an oily-sugar mixture, and since it's coated, it won't release juice. This way, you'll have a crust on the outside and juicy meat on the inside.

Add wine and sauté a little more. Meanwhile, chop the ginger and cinnamon and add them to the wok.

We pour water over the meat just to cover it and bring it to a boil. While the water is boiling, we chop the chili pepper and add it to the meat. It will be spicy, but in moderation.

Once it boils, reduce the heat to a gentle simmer and let it bubble quietly for about 30 minutes. For a side dish, rice or vegetables like green beans are suitable - just sauté them in oil and sprinkle with coarse salt. Five minutes before the meat is done, add 3 tablespoons of soy sauce to the wok.
