Updike Burger

As you can easily guess from the name, this burger is made from the rabbit that in John Updike's novels ran away, came back, got rich and calmed down. Recipe author Oleg Petrichenko, chef of the burger bistro Cheapside

Pass the rabbit fillet through a meat grinder - use medium or fine mesh. Add cream. Knead the minced meat well and beat it. Let it rest for half an hour in the refrigerator.
- Rabbit fillet: 350 g
- Cream 33%: 100 ml

For the sauce, mix mayonnaise, ketchup, mustard, and Worcestershire sauce until smooth.
- Mayonnaise: 50 g
- Ketchup: 50 g
- Mustard: 30 g
- Worcestershire sauce: 10 g

Chop the lettuce randomly and mix it with the sauce.
- Lettuce: 40 g

Shape the patties using a culinary ring. Fry in vegetable oil for two and a half minutes, flip, season with salt and pepper, add mozzarella slices, and fry for another two and a half minutes.
- Vegetable oil: 1 tablespoon
- Salt: to taste
- Ground black pepper: to taste
- Mozzarella cheese: 50 g

Cut the cucumber into medium-sized slices, mix with lime juice, olive oil, and chopped dill, and add salt.
- Cucumbers: 1 piece
- Lime juice: 1 teaspoon
- Extra virgin olive oil: 1 teaspoon
- Dill: 1 stem
- Salt: to taste

Cut the buns in half. Place lettuce with sauce on the bottom halves, then the patties, followed by sliced tomatoes. Cover with the top halves of the buns. Serve cucumber slices separately in small bowls.
- Hamburger bun: 4 pieces
