Juicy pork in a sleeve is a dish that embodies the best traditions of Russian cuisine. It features tender and aromatic roasted meat that retains all its juices thanks to cooking in a special sleeve. This method allows the meat to slowly stew in its own juices, absorbing the aromas of spices and herbs, creating a rich, deep flavor. The simplicity of ingredients – salt, pepper, dried herbs – makes it versatile and accessible, while the tender texture and golden crust turn it into the perfect dish for family dinners and festive gatherings. This meat pairs excellently with potatoes, fresh vegetables or light sauces, and its rich flavor and tenderness captivate from the very first bite.

Place the meat on the board, fat side up, and make cuts almost to the bottom to create a 'book'. Rub salt, pepper, and herbs (I have a mix of Italian herbs) all over.
- Salt: to taste
- Ground black pepper: pinch
- Dried herbs: to taste
- Pork neck: 700 g

Carefully place the meat in the sleeve. Spread it out to cook evenly. Send it to a preheated oven at 200 degrees for 50-60 minutes (depending on weight). In the end, I do NOT cut the sleeve, as the crust forms anyway.
