Chicken Saltimbocca

Chicken saltimbocca is an exquisite dish of Italian cuisine inspired by a traditional veal recipe. Place the fillet on the cutting board. Press down with one hand and cut each piece horizontally into two thinner pieces with the other hand.

Wrap the chicken slices in plastic wrap and gently pound them to make them evenly thin. Unwrap, season with salt and pepper.
- Chicken fillet: 2 pieces
- Sage leaves: 8 pieces

Attach a couple of sage leaves on top of each piece using toothpicks (so that the skewers are as parallel to the surface of the chicken as possible).

Dip the bottom part of the chicken in flour. Heat olive oil in a pan and place the chicken with the sage side down. Fry for one and a half to two minutes, then flip and cook for the same amount of time.
- Wheat flour: 2 tablespoons
- Olive oil: 2 tablespoons

Splash some wine into the pan, then immediately remove the chicken. Boil the wine for another minute - this will be the sauce to pour over the chicken when serving.
