Boil the udon noodles according to the instructions on the package.
- Udon noodles: 200 g

Drain the water and rinse with cold water, leave until preparing the vegetables.

Prepare the sauce. In a clean glass jar from olives, mix miso, sake, soy sauce, and sugar.
- Miso paste: 1 tablespoon
- Sake: 2 tablespoons
- Soy sauce: 1 tablespoon
- Sugar: 1 teaspoon

Close the jar with a lid and shake well until a homogeneous mass forms.

Prepare the vegetables and mushrooms. Slice the mushrooms lengthwise, cut the pepper into large diamond shapes about 2 cm, chop the green peas into 3-4 pieces crosswise, peel the shallots and slice them lengthwise into petals, and cut the green onions into stem pieces about 4-5 cm long.

Heat the peanut oil in a wok until it starts to bubble.
- Peanut butter: 2 tablespoons

Add mushrooms and sauté for about 2 minutes, stirring constantly.
- Shiitake mushrooms: 100 g

Add miso sauce and shallots and sauté for another 2 minutes, stirring constantly.
- Miso paste: 1 tablespoon

Add green peas and red pepper and sauté for another 1-2 minutes, stirring constantly.
