Preheat the oven to 200 degrees. Chop the raisins, add pine nuts and grated lemon zest. Mix and add salt, pepper, and rosemary. Knead the mixture by hand.
- Light raisins: 20 g
- Pine nuts: 30 g
- Orange zest: 1 piece
- Salt: to taste
- Ground black pepper: to taste
- Rosemary: 0.5 teaspoon

Flatten the chicken thighs, preferably boneless (if there is a bone, remove it or replace the thighs with fillet). Spread the mixture over the meat and distribute evenly. Roll into roulades and secure with toothpicks or skewers.
