Crispy Potato Slices

Crispy potato slices are a dish inspired by Russian culinary traditions, where the simplicity of ingredients combines with rich flavor. Thinly sliced potatoes soaked in aromatic oil and baked to a golden crust acquire a unique texture: crispy on the outside and tender on the inside. The addition of onion adds a subtle sweetness, while thyme brings an exquisite herbal note. This dish is perfect as a side or standalone snack, especially when paired with sour cream, cream, or bacon. Preheat the oven to 190 degrees.

Melt butter in the microwave or in a small pot on the stove, then mix it with vegetable oil.
- Butter: 50 g
- Vegetable oil: 3 tablespoons

Peel the potatoes and slice them as thinly as possible using a special grater or a sharp knife.

Grease the bottom and sides of a baking dish Ø 22–25 cm with a mixture of 1 tablespoon of butter and vegetable oil, and place sliced potatoes inside (arrange potato slices vertically).
- Vegetable oil: 3 tablespoons
- Potato: 2 kg

Clean the onions and cut them into thin rings. Carefully insert the onion rings between the potato slices.
- Onion: 4 pieces

Add red pepper flakes to taste and two pinches of salt to the mixture of butter and vegetable oil. Brush the dish with this mixture. Salt it.
- Coarse salt: pinch
- Vegetable oil: 3 tablespoons
- Butter: 50 g

Bake the potatoes for about 1 hour 15 minutes, then take the dish out, place thyme sprigs on top, and bake for another 35 minutes — until done (the potatoes should be crispy). If the potatoes start to burn on top, cover them with foil.
