Clean and cut the squid into 3x3 cm squares.

In a pan, heat half of the butter and a little olive oil over high heat. Sauté the squid for two minutes, one minute on each side. Place the squid on a plate and set aside.
- Butter: 20 g
- Olive oil: 1 tablespoon
- Squid: 1 kg

In the same skillet, add the remaining butter and olive oil and sauté the shallots until golden brown. Now return the squid. Add cognac and flambé. Add white wine and bring to a boil, then add tomato paste and peeled, seeded tomatoes, seasoning to taste. Cook for 2 minutes and pour in the cream.
- Butter: 20 g
- Olive oil: 1 tablespoon
- Shallots: 3 pieces
- Cognac: 30 ml
- Dry white wine: 0.8 glass
- Tomato paste: 1 teaspoon
- Tomatoes: 3 pieces
- Salt: to taste
- Ground black pepper: to taste
- Sour cream: 1 tablespoon

Mix breadcrumbs, grated parmesan, and minced garlic.
- Breadcrumbs: 100 g
- Grated Parmesan cheese: 2 tablespoons
- Garlic: 1 clove

Preheat the oven to 220 degrees. Place the squid in a baking dish and cover them with breadcrumbs.
