Hariza with meat

Arisa is a hearty and comforting dish with roots in traditional European cuisines. Tender meat, cooked round wheat, and golden-fried onions create a harmonious blend of flavors. Arisa is especially good in cold weather when something nourishing and warming is desired.

Rinse the grains and soak them in cold water for 1 hour.
- Round grain wheat (dzavar): 300 g

Pour water over the meat, bring to a strong boil, remove the foam, and boil. Take the cooked meat out of the broth, separate the flesh from the bones, and cut it into pieces. Strain the broth and bring it to a boil.

Add pre-soaked grains and pieces of meat to the boiling broth. Cook the porridge on low heat for about 1 hour, stirring constantly. Salt the porridge while mixing.
