Bulgarian-style potatoes with cottage cheese is a tender and nutritious dish rooted in Bulgarian culinary traditions. Bulgaria is famous for its simple yet delicious rural recipes, and this baked potato with cottage cheese is a vivid example. Thin slices of potato soaked in butter and spices are baked under a layer of airy cottage cheese and then covered with a delicate mixture of eggs and yogurt, creating a golden crust. The dish combines the softness of the cheese mass with the slight tanginess of yogurt, while the potatoes become especially aromatic and melt-in-your-mouth. It can be served as a standalone treat or as a side dish to meat or vegetables. It's important to eat it hot to fully appreciate its creamy texture and rich flavor.

1
Beat the cottage cheese with softened butter, salt, and pepper until smooth. If the cottage cheese is very dense, it should be passed through a sieve first. Peel the potatoes and slice them very thinly.
- Cottage cheese: 500 g
- Butter: 100 g
- Potato: 6 pieces
2
In a greased baking dish, layer one third of the potato slices, then spread one third of the cottage cheese mixture on top. Add another third of the potatoes and cottage cheese. Layer the remaining potatoes and cottage cheese, smoothing the surface with a wet spatula. Cover the dish with foil, tucking in the edges. Place in a preheated oven at 190 degrees for 1 hour and 10 minutes. Remove from the oven and take off the foil.
3
Reduce the oven temperature to 180 degrees. Whisk the eggs with yogurt, salt, and pepper into a light foam.
- Chicken egg: 2 pieces
- Natural yoghurt: 250 g
4
Pour the resulting mixture over the potatoes and return to the oven for another 20 minutes.
