We peel the oranges, separate them into segments, and cut them into pieces 1-2 cm thick. In a pot, we pour in orange juice, add the oranges, dried mint, grated galangal (a piece about 2 cm long), salt, and sugar (if you want the sauce to be distinctly sweet; optionally, you can add 1 tablespoon of lemon or lime juice for acidity).
- Oranges: 2 pieces
- Orange juice: 100 ml
- Dried mint: 2 tablespoons
- Galangal: 10 g
- Salt: to taste
- Sugar: to taste

Stirring occasionally, bring to a boil, add a spoonful of sifted flour for thickness, and mix well. Simmer on low heat with a lid for another 15 minutes. Remove from heat.

Spray the boneless salmon fillet with soy sauce and place it skin-side up on a rack in a preheated oven at maximum temperature (it's advisable to place an empty baking tray underneath to catch any drippings). Bake for 10-12 minutes for a crispy crust.
