Cook the rice until done. In a wide saucepan, heat olive oil, add 1 teaspoon of curry, and hold for 1 minute, stirring frequently. Add diced chicken, mix to coat evenly with curry oil, and fry for 5-6 minutes, then transfer to a plate.

In the same saucepan, sauté diced onions and sliced apples (remove the core) with 1 teaspoon of curry until the onions are soft. Add garlic, mince, stir, pour in the broth, add diced dried apricots and spices to taste. Simmer covered for 3-5 minutes, stirring until the apples are soft.
