Tender liver cutlets are a refined dish of Russian cuisine that combines the rich flavor of liver with a crispy golden crust. This recipe originates from traditional Russian family lunches where liver was prepared with special care to preserve its softness and juiciness. Thanks to the breading of breadcrumbs and egg mixture, the liver acquires an appetizing texture and rich aroma that pairs wonderfully with simple yet expressive spices. These cutlets can be served with mashed potatoes, buckwheat porridge, or a light vegetable salad. They are perfect for both a cozy home dinner and a festive table setting, allowing one to enjoy the classic flavors of Russian cuisine in all their tenderness and depth.
