Peel the potatoes, boil them until cooked under a lid on low heat in a small amount of salted water. Ideally, they should be cooked not on the stove, but in a Russian oven or in the oven.

- Salt: to taste

Cut the fat into small cubes and fry until crispy. The cracklings should be crispy on the outside and tender on the inside. Remove the cracklings from the pan and fry the sliced onions in the remaining fat until caramel soft.
