Preheat the oven to 190 degrees.

In a small skillet, heat 1 tablespoon of olive oil over medium heat, add garlic and sauté for 30 seconds. Add cayenne pepper, sugar, tomatoes, and half of the oregano, mix well, and simmer for 20 minutes, stirring occasionally. Season with spices.
- Olive oil: 3 tablespoons
- Garlic: 1 clove
- Cayenne pepper: pinch
- Cane sugar: pinch
- Canned tomatoes: 400 g
- Oregano: 3 teaspoons

Put flour in a bowl and add spices. In another bowl, beat the eggs with 2 tablespoons of water. Mix the breadcrumbs with the remaining oregano and spices and pour into a third bowl.
- Wheat flour: 40 g
- Chicken egg: 2 pieces
- Crushed breadcrumbs: 65 g

Place the meat between 2 pieces of plastic wrap and pound it to a thickness of 5 mm. Dip the meat first in seasoned flour, then in egg, and finally in breadcrumbs.
- Veal chops: 4 pieces

Heat the remaining olive oil in a large skillet and fry the cutlets until golden brown for 2 minutes on each side. Transfer to a fireproof dish in 1 layer and pour the sauce on top. Sprinkle with mozzarella and then parmesan. Bake for 20 minutes until golden brown.
