Prepare all the ingredients.

Wash the celery stalks well and remove the coarse outer layer. Cut the stalks in half crosswise.

Boil water in a pot and add salt.

Dip the stems in boiling water for a minute.
- Celery stalk: 280 g

Transfer the stems from boiling water to ice water.

Pour fish broth and vermouth into the pan, place on heat, and reduce until the liquid thickens.

- Dry vermouth: 50 ml
