Potato casserole with garlic and spinach is a delicate and aromatic dish rooted in Russian culinary traditions. The casserole combines the velvety texture of mashed potatoes, the rich flavor of sautéed garlic, and fresh notes of spinach that add brightness. Butter and sour cream make the dish creamy, while a baked egg adds an appetizing crust. Such casseroles were often prepared in Russian homes as a hearty and simple dish suitable for family dinners or festive feasts. It pairs perfectly with pickles or a light salad. The finished casserole delights with a balance of flavors — soft potatoes, spicy garlic, and tender spinach creating harmony. This versatile treat can be served as a standalone dish or as a side to meat and fish dishes.

You need to drain the water and place the potatoes in a warm place, while melting butter in a pan and frying finely chopped garlic in it.

Once the garlic starts to smell, add the spinach leaves to the pan and stir until they wilt, as if all the life force has gone from the greens into the sauce. Then season with salt and pepper, and mix with potatoes and sour cream using a large fork.
