Make two shallow cuts on each side of the fish. Season the inside and outside with salt.

In a deep fryer or deep skillet, heat the oil to 180–190 degrees (you can check with a cube of yesterday's bread: at this temperature, it should brown within 30 seconds).
- Corn oil: 500 ml

Coat the fish in flour and fry in hot oil two pieces at a time until golden brown. Transfer the cooked fish to a warmed plate and keep warm while the other portions are being prepared.

When all the fish portions are ready, drain the vegetable oil from the pan and add butter, melting it over low heat.
- Corn oil: 500 ml

Remove the pan from heat and add lemon juice and parsley. Return the pan to heat and warm, stirring the oil with the juice constantly. Drizzle the finished oil over the fish and serve immediately.
