1
Prepare all the ingredients. Light the coals in the grill.

2
Shift part of the coals to the side under the grill to reduce heat under half of it.

3
Season the steak with salt and pepper on both sides.
- Coarse salt: to taste
- Ground black pepper: to taste

4
Move the steak to the part of the grill where there are still coals.
- Beef diaphragm: 300 g

5
Fry for about 4 minutes, turning frequently.

6
Move the steak to the cold zone of the grill and measure the internal temperature of the meat. It should be around 42 degrees.

7
If the temperature is below 42 degrees, return the steak to the hot part of the grill and cook it for a couple more minutes on both sides.

8
Transfer the steak to a board and let it rest for a few minutes. During this time, it will reach readiness.

9
Salt and pepper the steak again while it rests. After a few minutes, you can measure the internal temperature of the meat again; 46 degrees is the medium rare cooking temperature.
- Coarse salt: to taste
- Ground black pepper: to taste

10
Slice the steak into thin pieces.

11
Serve the butcher's steak with salt and pepper.
- Coarse salt: to taste
- Ground black pepper: to taste
