Wash the potatoes, peel them, and slice them very thinly. Rinse the slices with cold water and dry them with a paper towel.

Grease a deep baking dish with oil. Line the bottom and sides of the dish with potato slices. Fill the remaining space with layers of potatoes, seasoning each layer with salt, pepper, chopped parsley, and drizzling with melted butter. Cover with a lid and place the dish in a preheated oven at 200 degrees.

When the potatoes settle, take them out of the oven and pour the remaining oil over them. Then simmer the potatoes for another hour.
