Prepare rice: add rice to a pot of boiling unsalted water, stir with a wooden spoon, and cook on high heat for 12-15 minutes until the rice is soft. Drain the rice in a large colander and rinse well under cold water. Allow the water to drain.

Finely chop the onion, dice the ham and chorizo, and grate the cheese. Heat olive oil in a large pot. Add the onion and cook on low heat, stirring, for 5-8 minutes until golden. Add the ham and chorizo, mix, add the rice, and cook for 5 minutes, stirring with a wooden spoon.

- Chorizo: 100 g
- Olive oil: 3 tablespoons
- Long grain rice: 500 g

Salt to taste, stir in the peas, and cook for a few more minutes. Serve with finely grated Parmesan.
