Pass the washed and dried meat through a meat grinder twice, add an egg, flour, salt, and pepper to taste.
- Beef: 500 g
- Chicken egg: 2 pieces
- Wheat flour: 1 tablespoon

Mix everything well to get a homogeneous minced meat.

Prepare the filling. Combine mushrooms with fried onions, season with salt and pepper to taste, and mix.
- Fresh mushrooms: 150 g

Prepare the liaison. Whisk the egg with milk (1 tbsp), and season with salt to taste.

Peel, wash the potatoes, and cut them into small cubes or shavings.

Form patties from the minced meat, place onion-fish filling on each, and carefully join the edges to shape the cutlets.

Dip in the batter, coat in raw potato, and dip again in the batter.
