Take the rabbit carcass and cut it into portioned pieces.
- Rabbit: 600 g

Sprinkle the rabbit with black pepper and salt. Add vinegar and a little vegetable oil. Let it marinate for 40-60 minutes.

- Vinegar 5%: to taste

While the rabbit is marinating, take the onion, peel it, and cut it into quarter rings.
- Onion: 1 head

Fry the onion until lightly browned, add a little water to start cooking and softening the onion, wait for the water to evaporate, then fry the onion again. Repeat this four to five times for even caramelization until the onion turns a nice brown color.

Put the prepared onion in a separate bowl.

Wash, peel, and cut the carrot into fairly large pieces.

Place in the pan and sauté a little. No need to cook until done.

Put the carrot in the bowl with the onion.

Wash the potatoes, peel them, and cut them into large pieces. Place in a greased baking dish. Add butter to the potatoes, and season with salt and pepper.
- Potato: 6 pieces
- Butter: 50 g

Take marinated rabbit pieces and fry on high heat on both sides to seal the meat.

After frying, place the rabbit next to the potatoes.

Place the carrot and onion on top, season with salt and pepper. Add a little water to prevent the rabbit from drying out.
