Grill the steaks for 2-3 minutes on each side.
- Beef steak: 4 pieces

Briefly blanch the lettuce leaves and wrap them around the steaks, holding on the grill for another minute.
- Romaine lettuce: 4 pieces

For the sauce: mix vinegar, salt, water, and a little sugar, add yolks and green oil.
- Tarragon vinegar: 10 ml
- Salt: 5 g
- Water: 10 ml
- Sugar: to taste
- Egg yolk: 65 g
- Green oil: 250 g

Place a portion of steak on a salad leaf. Serve the mousse sauce separately, and you can garnish the dish with burnt young onions.
