Pork neck in the oven

The simplest recipe, which requires only 6 hours of time, ideal pork neck, salt, pepper and coriander. The meat really should be very good: there is practically nothing to shade it here and all the taste flaws will immediately come to light .

Dry the pork neck, rub with salt, pepper, and coriander. Place in the refrigerator for 1-2 hours. If short on time, you can start baking immediately.
- Pork neck: 1 kg
- Ground coriander: to taste
- Salt: to taste
- Ground black pepper: to taste

Transfer the meat to a baking tray and place it in an oven preheated to 100 degrees. Bake for about 3 hours, the internal temperature of the meat should reach 60 degrees.

When the meat reaches 60 degrees, increase the oven temperature to 220 degrees and bake for another 10-15 minutes to achieve a golden crust. The internal temperature of the meat should reach 63 degrees, indicating that it is cooked and not dried out.

Take the cooked neck out of the oven and let it rest for 15 minutes before serving.
