Rinse the rice well, soak it in cold water for 10-15 minutes. Drain the water. Bring the cooking water (two cups) to a boil.
- Long grain rice: 1 glass
- Water: 2 glasss

Place a pot (preferably with a thick bottom) over medium heat, pour in oil, add all the spices and quickly stir-fry them for a maximum of one minute. Add the rice, mix well and fry the rice in the spices for another 2-3 minutes.
- Olive oil: 2 tablespoons
- Ground cinnamon: 1 teaspoon
- Ground ginger: 1 teaspoon
- Coriander seeds: 1 teaspoon
- Nutmeg: 1 teaspoon
- Long grain rice: 1 glass

Pour water over the rice, add salt, bring to a boil, cook for about 3 minutes on high heat, then reduce to low heat and finish cooking the rice.
- Water: 2 glasss
- Salt: to taste
