Clean the carp from scales, entrails, and gills, dry it with a paper towel, and make deep cuts along the spine down to the bone.

Slice the onion into rings, stuff the fish, season with salt and pepper.

Marinate in soy sauce with garlic and sumac. Leave for 20 minutes.
