Juicy slices of ham are slowly baked in aromatic mushroom broth, infused with spices and the juices of fresh vegetables: potatoes, carrots, eggplants, and onions. Heat olive oil in a pan. Wash the meat and dry it with paper towels. Season with salt and pepper on all sides. When the oil is hot, fry for one to two minutes on each side (to brown) at maximum temperature.
- Olive oil: 2 tablespoons
- Pork ham: 800 g
- Salt: 2 teaspoons

Peel the potatoes and carrots, and chop them into 1-2 cm cubes. Once the meat is browned, place it in the center of the baking dish, and add the potatoes and carrots to the skillet. Sauté for 3-4 minutes over medium heat.
- Potato: 4 pieces

Peel the onion, cut it in half and then each half into 4 parts. Cut the eggplant into cubes resembling potatoes. Place all the vegetables around the meat in the dish, including the fried ones. Pour the oil from the pan there as well.

Sprinkle the vegetables with salt, thyme, and oregano, and pepper everything. Gently mix the vegetables to distribute the spices.

Pour everything with a liter of mushroom broth (one liter of hot water and two cubes)

Cover the dish with foil and send it to the oven at 180 degrees for an hour.

After an hour, open the foil and place halves of 4-5 cloves of garlic deeper into the vegetables. Close the foil and set for another 30 minutes at 160 degrees.
