Dumplings with cottage cheese and honey

Vareniki with cottage cheese and honey is a classic Ukrainian dish that embodies the warmth of home cooking. The history of vareniki goes back to ancient times, and their popularity extends far beyond Ukraine. The light kefir dough with added spelt flour makes them especially soft, while the cottage cheese mixed with egg and honey adds tenderness and natural sweetness. They are served with sour cream or melted butter, creating a perfect combination of flavors. Sift the flour and make a small well. At this moment, you can optionally add a little salt to taste.
- Spelt flour: 300 g
- Salt: to taste

Crack an egg into the well of the flour.
- Chicken egg: 2 pieces

Pour the kefir into a separate bowl and add a pinch of baking soda, then mix.
- Kefir 1%: 100 ml
- Soda: pinch

Pour the kefir into the flour in parts and knead the dough. The dough should be quite dense, so it's better not to pour all the kefir at once, as the flour absorbs the liquid gradually.

Dust the table with flour and knead the dough on the table until it becomes soft, uniform, and elastic. The dough should not stick to your hands.
- Spelt flour: 300 g

Leave the dough at room temperature for 30-40 minutes in a bowl covered with a towel to prevent it from drying out.

Place the cottage cheese in a separate bowl, add the egg and honey. Mix thoroughly.
- Cottage cheese crumbly: 300 g
- Chicken egg: 2 pieces
- Honey: to taste

Divide the prepared dough into two or three parts, roll each part into a thin layer. Use a glass or special culinary molds to cut out circles about 10 cm in diameter.

Place the filling in the center of each circle and secure the edges.

Boil water and add a little salt. Add the portion of dumplings to the boiling water, stirring to prevent them from sticking to the bottom of the pot and to each other.

After the dumplings float, they need to be boiled for about 3 more minutes.
