Poltava dumplings

Dumplings are easy to confuse with dumplings - both are found in soups. But dumplings are also eaten without broth, for example, simply fried with lard, as in our recipe.

Mix kefir, egg, baking soda, and a pinch of salt.
- Kefir: 190 ml
- Chicken egg: 1 piece
- Soda: 0.5 teaspoon
- Salt: to taste

Sift the flour.
- Wheat flour: 380 g

Knead the dough, cover with plastic wrap, and let it rest for 20 minutes.

Cut the fatty pork into small cubes and put it in the pan. Fry it first on low heat to render the fat, then you can increase the heat.
- Lard (fat): 200 g

When the cracklings are golden, add diced onion and fry for another 4-5 minutes until the onion turns golden.
- Onion: 1 head

Add salt and pepper to taste.
- Salt: to taste
- Ground black pepper: to taste

Dust the table well with flour. Roll the dough into a sausage about 2 cm in diameter.
- Wheat flour: 380 g

Cut it into round pieces about 1 cm thick.

Drop the dumplings into boiling salted water and cook for 2-3 minutes.

Mix the ready dumplings with the prepared cracklings and serve immediately.
