Beef tartare with yolk

Prepare tartar sauce: mix vegetable oil, ketchup, Tabasco, and Worcestershire sauce in a bowl.
- Vegetable oil: 50 ml
- Ketchup: 50 g
- TABASCO®: 4 ml
- Worcestershire sauce: 6 ml

Cut the beef, gherkins, and red onion into small cubes. Chop the parsley finely as well. Mix everything together and add the sauce. Let it marinate for 2-3 minutes at room temperature. Then season with salt and pepper to taste.
- Beef tenderloin: 400 g

Place the tartare on a plate. Make a small indentation and top with the yolk. Season the yolk with black pepper and salt. Garnish with chervil.
