Preheat the oven to 100 degrees. Remove the casing from the sausages and fry over medium heat. Place the fried sausage meat in a heatproof dish and put it in the oven to keep warm. Drain the fat from the pan, leaving about 6 tablespoons.
- Sausages: 250 g

Peel the potatoes and grate them on a coarse grater, draining the liquid. In a medium bowl, mix the potatoes, onion, salt, and pepper. Return the pan used for sausages to high heat. Spread the potatoes evenly in the heated pan and fry until golden brown. Lower the heat, flip the potatoes and fry on the other side, then transfer to a cutting board and cut into large pieces. Place the cooked potatoes in the oven.
- Boiled potatoes: 4 pieces
- Ground dried onion: 1 teaspoon
- Salt: to taste
- Ground black pepper: to taste

Place the pan on high heat. Beat the eggs and pour the egg mixture into the pan. Add salt and pepper, and cook while stirring frequently.

Place the tortilla on a clean work surface. Spread 1/4 of the cheese on the tortilla, smear with salsa, add potatoes, sausages, and eggs. Fold the edges of the tortilla. The burrito is ready! Do the same with the remaining tortillas and filling. To keep the burritos warm, wrap them in foil.
