Tortilla with sausage and green beans is a hearty and appetizing dish of Spanish cuisine that embodies the traditions of home cooking. The Spanish tortilla, originally created as a simple egg flatbread with potatoes, has many variations, each adding new flavors. In this version, delicate doctor sausage adds spiciness while green beans provide freshness and lightness. Mashed potatoes make the texture especially soft, and melted cheese adds creamy notes. This dish is perfect for a cozy dinner or breakfast and also makes an excellent snack option.

1
Cut the sausage into pieces and fry in a drop of vegetable oil. Set aside.
- Doctor's sausage: 100 g
- Vegetable oil: 30 ml
2
Boil the beans, drain them, and rinse with cold water (to preserve color).
- Green beans: 100 g
3
Crack the eggs into a bowl, whisk until smooth, then add the sausage and beans.
- Chicken egg: 4 pieces
- Doctor's sausage: 100 g
- Green beans: 100 g

Spread the puree on the bottom of the pan (if there is no puree, you can fry potato slices and also place them at the bottom of the pan). Pour the egg-sausage-bean mixture over it and cover with a lid, cooking on low heat.
- Mashed potatoes: 250 g

One minute before the end, spread the cheese over the surface. I had melted cheese, but hard and soft cheese will work too – the main thing is to distribute it evenly over the entire tortilla surface (better to grate it).
- Cheese: 100 g
