Broccoli pancake with salmon and egg

A great combination of three different things that complement each other well: broccoli, salted fish and egg. Chef Dmitry Golenin shared the recipe from the Sage restaurant menu. The design is topped with a basil leaf - and let it be green, not red.

Wash the broccoli and grate it on a coarse grater.
- Broccoli cabbage: 1 kg

Add flour, 4 eggs, 120 ml of cream, and salt to taste.
- Wheat flour: 240 g
- Chicken egg: 8 pieces
- Cream: 280 ml
- Salt: to taste

Knead until homogeneous, shape into round draniki.

Fry the draniki in olive oil on both sides until cooked.
- Olive oil: 50 ml

Put Parmesan, 160 ml of cream, and cream cheese in a saucepan and place it on low heat.
- Parmesan cheese: 400 g
- Cream: 280 ml
- Cream cheese: 400 g

Melt to a homogeneous mass, stirring constantly, and remove from heat.

Boil the eggs. Pour water into a small pot and put it on high heat.
- Chicken egg: 8 pieces

Once the water boils, stir it to create a vortex in the center.

Break 1 egg in the center of the funnel.
- Chicken egg: 8 pieces

Boil for 6 minutes. Remove the egg with a slotted spoon and set aside. Do the same with the other eggs.

Place the draniki on a plate and spread them with creamy cheese sauce.
- Cream cheese: 400 g

Place pieces of salmon on top, and on the fish, add a poached egg.
- Lightly salted salmon: 200 g
- Chicken egg: 8 pieces

Sprinkle with olive oil, season with salt and pepper.
- Olive oil: 50 ml
- Salt: to taste
- Ground black pepper: to taste

Garnish with basil leaves.
