The recipe is taken from the book "On Delicious Vegan Food". Alas, vegan fried eggs have not yet been invented, but scrambled eggs, or scrambled eggs, are welcome. With tomatoes, of course. Onions and greens are optional . By the way, any tofu will do for scrambled eggs - both hard and soft silky. With the former, the scrambled eggs will be denser, with the latter - tender.

Cut the tomato into cubes.
- Tomatoes: 1 piece

Mash the tofu with a spoon, mix it with turmeric to achieve a yellowish color.

Heat vegetable oil in a pan, lightly fry the tomatoes, add tofu, and cook without a lid to evaporate as much liquid as possible. Season the scramble to taste and serve hot.
