We wash the eggplants, trim the green tails, and slice them lengthwise into 5 mm thick plates. Then we place them on a baking sheet greased with olive oil, salt them, and send them to the oven for 15 minutes.

While the eggplants are being prepared, we make the filling for the rolls. For this, we grate cheese, mix it with cottage cheese and finely chopped greens, add garlic, and season with salt and pepper to taste.

We wrap the filling in soft and still warm layers of eggplant, so the cheese melts a bit and the garlic becomes more aromatic. If the eggplants are well-cooked and not thicker than 5 mm, the rolls do not unfold.
