Zucchini roll with mushrooms and minced meat is a delicate and aromatic dish of Russian cuisine that combines the lightness of vegetables with the richness of meat filling. Grate the zucchini on a coarse grater and squeeze out the juice.
- Zucchini: 600 g

We add eggs, flour, salt.
- Chicken egg: 2 pieces
- Wheat flour: 100 g
- Salt: to taste

Spread the prepared mixture on a baking sheet lined with parchment paper in a thin layer (1–1.5 cm).

Bake in a preheated oven at 250 degrees until golden brown for about 30 minutes.

While the zucchini is cooking, we prepare the filling. We fry the mushrooms (I had a jar of mushroom caviar), add the minced meat, salt, and pepper. We add finely chopped green onions and processed cheese (hard cheese can also be used, but I had this) to the still warm filling and mix.
- Mushrooms: 250 g
- Ground meat: 160 g
- Salt: to taste
- Green onions: 30 g
- Processed cheese: 100 g

Spread the filling on the cooled zucchini flatbread and roll it up.

We decorate as desired with greens or tomatoes.
