Grate the carrot on a fine grater, mix with salt, pepper, crushed garlic, and ground bay leaf until a homogeneous mass is formed.

Make holes in the surface of the beef with a knife, stuff them with a mixture of spices and carrots. Rub the remaining mixture over the surface of the meat.

Preheat the oven to 180 degrees, place the meat in a roasting bag, making sure to leave a small hole (if not, the bag may burst and the meat will be dry). Leave in the oven for about 3-3.5 hours.
