Preheat the grill or barbecue.

In a small bowl, mix cheese, softened butter, minced garlic, lime juice, cilantro, salt, and pepper.
- Coriander leaves: 1 tablespoon
- Monterey Jack Cheese: 60 g
- Butter: 60 g
- Garlic: 3 g
- Lime juice: 2 teaspoons
- Salt: to taste
- Ground black pepper: to taste

Cut off the stems of the mushrooms and place them, cap side down, on a sheet of thick foil folded in half. Fill the caps with cheese mixture and cover with another sheet of foil on top. Seal the edges tightly and place on the grill. Grill for 20 minutes without flipping, until the mushrooms are soft.
