Mix mayonnaise with cream, lemon juice, salt, and sugar.
- Mayonnaise: 4 tablespoons

Fill the tartlets with the mixture.
- Tartlets: 4 pieces

Slice the lobster meat and arrange it beautifully on top of the mayonnaise.
- Lobster tail: 2 pieces

Pour jelly made from white wine into the tartlets.
- Jelly: 100 g

Put in the refrigerator.

Place clean salad leaves on four serving plates and put the tartlets on top.
