Carrot pancakes with cumin and coriander

Something in the set of ingredients seems vaguely familiar. Cumin, coriander, carrots, aromatic frying... Does it remind you of anything? Yes, this is the usual dressing for pilaf, also known as zirvak. Here it appears without any rice, and very successfully. Such pancakes can be served as an appetizer with a slice of lemon, yogurt or crumbled feta cheese. Or use as a side dish, for example, for stewed lamb.

Grate the carrot and onion, chop the garlic.
- Carrot: 500 g
- Onion: 1 head
- Garlic: 1 clove

Roast cumin with coriander to release the aroma, then grind them in a blender or mortar.
- Cumin seeds: 1 teaspoon
- Coriander seeds: 1 teaspoon

Mix the vegetables, chopped cilantro, and spices.
- Coriander: 50 g

Mix flour and eggs, add salt.
- Wheat flour: 50 g
- Chicken egg: 2 pieces
- Natural yoghurt: to taste

Fry the pancakes in heated oil until golden brown on both sides. Serve with yogurt and a slice of lemon.
