Flatbreads with cheese, mushrooms and herbs

Cheese, mushroom, and herb flatbreads are a true gastronomic journey to sunny Greece. This recipe is based on Armenian lavash gently infused with a fragrant filling of three types of cheese, sautéed oyster mushrooms, aromatic garlic, and fresh herbs. Feta adds a slight saltiness, Russian cheese contributes creaminess, while Parmesan provides a rich creamy flavor. Light crispy flatbreads browned in a pan are perfect for a cozy breakfast or a friendly gathering. They can be served with fresh yogurt sauce or spicy salsa. The cheese-mushroom combination has long been a classic of Mediterranean cuisine, and lavash turns it into a convenient and delightful snack. The dish is simple to prepare yet incredibly tasty, highlighting the depth of Greek culinary traditions.

Rinse the mushrooms, chop them, and sauté with onion and garlic until cooked.
- Oyster mushrooms: 300 g
- Onion: 1 piece
- Garlic: 3 cloves

Drain the liquid from the feta into a cup; it may be useful. If there's no liquid, use 20% cream.
- Feta cheese: 200 g

Grate all the cheese, chop the herbs, add the sautéed mushrooms and mix well. If it's too thick, dilute with feta liquid or cream. It should have a pâté-like consistency that can be spread but not runny.
- Feta cheese: 200 g
- Russian cheese: 150 g
- Parmesan cheese: 100 g
- Green: 200 g
- Oyster mushrooms: 300 g

Add salt and pepper to taste.

Lay the lavash on a flat surface. Spread half of the cheese-mushroom mixture on it. Distribute it more or less evenly across the surface. Cover with the second half of the lavash. Roll over a couple of times with a rolling pin, applying light pressure to distribute the filling inside.
- Armenian lavash: 4 pieces

Heat the pan with vegetable oil.
- Vegetable oil: 100 ml

Cut the lavash into equal squares and triangles with a pizza cutter, fry for one and a half to two minutes on each side. Don't forget to periodically change the oil and remove the cracklings.

Cool the flatbreads, place them on a plate, and decorate to your taste.
