In a saucepan, mix red wine (dense like Barolo, Dolcetto or Nero d'Avola), wine vinegar, sugar and spices, bring to a boil, reduce heat and continue cooking the sauce for 4-5 minutes.
- Red dry wine: 150 ml
- Red wine sauce: 2 tablespoons
- Sugar: 3 tablespoons
- Carnation: 2 pieces
- Anise (star anise): 1 piece
- Black peppercorns: 2 pieces
- Cardamom seeds: 2 pieces

Add the washed and halved figs, continue to simmer for 10 minutes until the sauce reduces by a third.

Put the cheese in the freezer for 15 minutes (this way, the cheeses will remain more compact during cooking and the outer crust won't melt too much).

Heat the grill pan and fry the cheese for 2-3 minutes on each side. Serve the cheese immediately with figs in red wine.
