Pour boiling water over the raisins.
- Raisin: 100 g

Chop the walnuts into coarse crumbs.
- Walnuts: 100 g

Cut the apples (I have 400 grams) into small cubes, add cinnamon, and mix well.
- Apple: 2 pieces

Place apples in a frying pan, squeeze juice from half a lemon, mix well and simmer uncovered until the apples soften and excess liquid evaporates.
- Lemon: 0.5 piece

Mix cottage cheese with yogurt, vanilla, and sugar substitute until smooth.
- Cottage cheese: 400 g
- Natural yoghurt: 2 tablespoons
- Vanillin: pinch
- Sugar substitute: to taste

Whisk the milk with the eggs.
- Milk: 4 tablespoons
- Chicken egg: 2 pieces

Cut the Armenian lavash (200 g pack) in half. From 2 packs, you will get 4 halves - for 4 strudels.
- Armenian lavash: 2 pieces

Completely coat each half of the lavash on one side with the milk-egg mixture (the side where the filling will be placed). This is done for softness, and some of the mixture should be saved for later.

Spread 1/4 of the cottage cheese on the sheets, leaving 3 edges (at least 5 cm on the sides and 10 cm at the back) free.
- Cottage cheese: 400 g

Mix apples with raisins and nuts and place 1/4 portion on the cottage cheese.

Pour 1 teaspoon of honey on each lavash.

Fold the free side edges of the lavash upwards towards each other, covering the filling on top.

Then roll it up like a roulade, starting from the near edge where the filling is.

Grease the surface of the rolls with the leftover milk-egg mixture and lightly sprinkle with cinnamon on top.

Bake in a preheated oven at 180° C for 20-30 minutes (check for browning).
