Banana mini rolls with dried apricots are a cozy treat filled with sweetness and aroma. Their roots trace back to American cuisine, where simplicity and natural ingredients are valued above all. These rolls combine the softness of banana dough with the rich flavor of dried apricots, complemented by notes of cocoa, cinnamon, ginger, and nutmeg. Sesame seeds add a subtle nutty note, while honey and stevia provide natural sweetness. These mini rolls are perfect for a light breakfast or a cozy tea time, and their delicate texture and harmonious taste make them a favorite treat for both children and adults.

Pour boiling water over the dried apricots.
- Dried apricots: 15 pieces

Purée the bananas with a fork or a mixer.
- Bananas: 2 pieces

Add honey, cocoa, baking soda, cinnamon, ginger, nutmeg (originally there was cardamom but I couldn't find it so I used what I had), stevia, vanillin and crushed sugar tablets to the puree - mix well and leave for 30 minutes in a warm place.
- Honey: 1 tablespoon
- Cocoa powder: 2 tablespoons
- Soda: 0.5 teaspoon
- Ground cinnamon: 1 teaspoon
- Ground ginger: 0.3 teaspoon
- Ground nutmeg: 0.3 teaspoon
- Stevia extract: 2 teaspoons
- Vanillin: pinch
- Sugar substitute in tablets: 6 pieces

Add flour and mix a thick, sticky dough with a spoon. (Depending on the size of your bananas, there may not be enough flour to prevent the dough from sticking - if needed, add more until the desired consistency is reached. The second time I made them, I ended up adding at least 100 grams of flour, and add more sweetener if necessary).
- Whole grain rye flour: 100 g
- Whole wheat flour: 100 g

The dough I got was enough for 15 small rolls (the second time - for 18).

Line the baking tray with foil and grease it with 1 teaspoon of olive oil.
- Olive oil: 1 teaspoon

With wet hands, pinch off a piece of dough, shape it into a flat round in your palm, place 1 piece of dried apricot inside, wrap it tightly in the dough to form a ball, and place it on a baking sheet.
- Dried apricots: 15 pieces

Brush each bun with a silicone brush dipped in water (to make the surface stickier) and sprinkle with sesame seeds.
- Sesame seeds: 20 g

Send to a preheated oven at 180° for about 20 minutes (check the condition, use a toothpick - if dry, it can be taken out earlier).
