Cherry cake is an exquisite dessert that comes from French cuisine. Its delicate, airy dough is infused with the aroma of lemon zest and butter, while cherries add a pleasant tartness, creating a harmony of flavors. Historically in France, cherries symbolized sophistication and pleasure, so such desserts were often served with morning tea or evening dinner with wine. The cake is perfect for cozy gatherings, festive tea parties, or simply as a sweet treat. Its dense structure and rich flavor make it a great choice for both everyday baking and special occasions. Cherries dusted with powdered sugar adorn the product, giving it an elegant appearance, while candied fruits add a touch of sweetness and textural variety.

1
Preheat the oven to 160 degrees. Place the mold on a baking sheet. Put the cherries in a sieve, rinse the berries with warm water. Dry the cherries on paper towels and cut into pieces.
- Dried cherries: 175 g
2
Whip softened butter with sugar into a fluffy light cream. While continuing to whip, add eggs one by one, adding a spoonful of measured flour with each if the mixture starts to curdle. Fold in lemon zest and juice.
- Butter: 175 g
- Sugar: 175 g
- Chicken egg: 3 pieces
- Lemon: 1 piece

Coat the cherries in a small amount of flour (from the total volume). Add the remaining flour with the baking powder. Add the berries and milk. Transfer the dough to a mold, smooth it out, and make a small indentation in the center. Sprinkle with candied fruits and place in the oven for 1 hour and 20 minutes. After 1 hour of baking, regularly check for doneness, as ovens vary. The finished cake should feel dense, and a toothpick inserted in the center should come out clean.
- Wheat flour: 225 g
- Baking powder: 0.5 teaspoon
- Dried cherries: 175 g
- Milk: 2 tablespoons
- Candied fruit: 1 tablespoon
