Combine the yolks with powdered sugar and a packet of saffron previously dissolved in a small amount of water.
- Egg yolk: 4 pieces
- Powdered sugar: 100 g
- Saffron: 0 g

Heat in a water bath until thickened.

Remove from heat, whisk with a mixer until the mixture cools.

Add rum.
- White rum: 20 ml

Whip the cream, combine with the yolks.
- Cream 35%: 500 ml

Spread the cream into molds and place in the freezer for 2-4 hours.

Remove the parfait from the mold and decorate with berries and mint leaves to taste.
