First, you need to bake a crust from shortcrust pastry with high sides. You can use any favorite recipe; I will share mine. Start by sifting 200g of flour with a pinch of salt and 50g of sugar. Add 100g of chilled butter, cut into cubes. Rub the mixture into fine crumbs. Add an egg and knead the dough. Try to handle the dough as little as possible to avoid overheating.
- Wheat flour: 220 g

Place the dough in the mold, form sufficiently high edges, and put it in the refrigerator for 40 minutes. Preheat the oven to 180 degrees and bake the crust for about 15 minutes.

For the cream: zest the lemons, squeeze the juice into a separate container. In a small saucepan, mix 200 g of sugar, 2 tablespoons of flour, starch, and a pinch of salt. Add 300 ml of water and place over medium heat. Remember to stir the mixture throughout the process. Stir in the lemon juice and zest. Continuously stirring, bring the mixture to a boil. Mix in 20 grams of butter.

In a separate bowl, mix 4 egg yolks, add about half of the lemon mixture, stir, and combine with the rest of the cream. Mix well and cook until thickened. Pour the cream over the cake layer.

Whip the egg whites to a foam, add about 60 g of sugar, and whip to medium peaks (since we are making soft meringue). Carefully spread the egg whites over the cream. Bake the pie at 175 degrees for about 10 minutes until the meringue turns a nice golden color.
